Tomato sauce is something I make at least once a week. I love pasta maybe a little too much. But with sauce this good, it’s hard not to want it all the time!
I always use canned tomatoes for my sauce – as long as you spend a little more for a good organic brand they tomatoes will be amazing!
I also use loads of olive oil – it kinda fries the tomato sauce as it cooks, turning it a deeper red and giving it loads of flavor.
I like to saute the bay leaves and other seasonings with the onion and garlic – it really brings out their flavors. And sauteing the onions for a while also allows them to release most of their liquid, so they’ll be sweet and soft.
The last important thing I do when I cook my tomato sauce: simmer it uncovered (or with a splatter shield over the pan!) until it’s so thick my spoon leaves a trail. Awww yeah.
