Back when I was working AND going to school full time I pretty much lived off these peanut noodles. They’re so full of flavor and a nice healthy alternative to yet another frozen dinner after a long day.
You can throw a batch together on Sunday night and eat well all week!

Plus, all you really need to do it cook the noodles, chop the veggies, and then make a sauce to cover it with. Easy peasy! Dinner for the week in 30 minutes.
